1. Melting If you need to melt cheese, using a dome is the fastest and most effective way to do it. Covering your burgers or sandwiches with a dome creates an oven-like environment that will quickly melt the cheese without the risk of overcooking or burning your food. 2. Steaming You can easily cook up some nice tender veggies just by using some water and a dome. Generously top your veggies with water and cover. The dome traps all the moisture and heat inside, steaming your veggies. Once they are cooked through, you can remove the dome, sear, and serve! 3. Popcorn If you haven't tried cooking popcorn on the Blackstone you are missing out. Simply apply some oil to a hot griddle, add the kernels, cover with the dome, and wait! *Just make sure you wait till it's stopped popping before removing the cover. Here's a great recipe for some Bacon Popcorn with Rum Salted Caramel 4. Smoking Add woodchips to a small pan and light. Place a warming rack directly onto the griddle top. Then you can put a piece of fish, or steak onto the rack. Move the woodchips next to the rack and cover with either your griddle's hood or a large basting dome. Let it sit for 20-45 minutes.
